Inspiration needed! Things to do with chicken and mince

Not together obviously!

DH quite often brings home chicken fillets and minced beef from work (he works in catering) and I am struggling with ideas for meals.

Our usually suspects include, chicken casserole, chicken fajitas, chicken curry and sometimes stuffed with mozzarella with a tomato type sauce. The mince usually goes in a cottage pie, lasagne, bolognese or mince pie. I have made all of the above at least once over the last 2 weeks and I have now run out of ideas. Any other suggestions will be gratefully recieved!

mince hot pot
home made burgers (chicken or mince)
meatballs (can use chicken or mince)
chicken and mushroom pie
kebabs (chicken or spicy mince)

i sometimes stir fry some chicken, mushrooms and boiled frozen garden peas (in a small amount of stock) and then stir in some cooked boiled rice and serve as a rice dish, the juices from the chicken and veg are soaked up into the rice to give flavour

we only tend to eat chicken or mince in our house as we dont really like much meat

Thanks for the ideas. I've made meatballs before which DH and I really enjoyed but the DC's (age 5 and 20mths) weren't too keen. Never thought of making burgers though. I'll give that a try as DS really enjoys having a burger.

What is the mince hot pot? Not heard of that one before. I forgot about chicken and mushroom pie, I used to make that quite regularly. I'll have to dust off the pie dish again!

The rice dish sounds good too, will have to give that a try also

A very old fashioned favourite in our house - mince and onions, with Yorkshire puddings!

500g beef mince
2 large onions, diced
4-6 carrots, sliced

Put some oil in a pan and fry the onions and carrots till softened. Season with salt, black pepper and oregano.

Add the mince, and fry till browned. Add a crumbled Oxo cube.

Add enough water to cover, then put a lid on the pan and simmer for at least 30 minutes.

Take off the lid, and raise the heat and cook till the liquid is reduced a little. Add a sloosh (technical term) of Worcestershire sauce and a little soy sauce.

It's even better if you can cook for longer/slower, or in a pressure cooker.

Serve with Yorkshire puddings and, for the most old fashioned/retro effect, some frozen peas!
