I have a load of them, dp bought another big bag not realising we already had a lot. Any ideas on using them? We love vegetarian food. TIA

Carrot cake's in t'oven. Stew was fab, made it more goulash-ish with paprika etc.. but with mash potato.

Timer's gone off so it's moment of truth!! I'll drizzle icing and juice over when it's cool.

Peel and cut them up and freeze. Then use them in cooking stews, soup, stocks, etc.

Thanks for freezing idea only thing is we don't have a freezer. I had 2 until I moved over here with dp. Now we manage with a fridge with ice compartment. The carrots have gone down only 1 bag now so they'll be soon used up. Might make a carrot and lentil bake? off to google

Xmas Grin I just can't believe how much I like it. I don't even have a sweet tooth?? Thank God the carrots are going down! Xmas Wink Anyway, I've run out of soft brown sugar.

ha ha ha. Im tempted to try the parsnip cake on the same site. I hate parsnips, but theres comments that its BETTER than carrot cake. How you can improve on perfection, I do not know. Xmas Grin

Do a nice couple of dips (a creamy one with creme fraiche and chives, guacamole, salsa, blue cheese dip etc, and use carrot sticks for dipping.

Grated raw with beetroot make a wonderful salad. Or grated with apple and a dash of lemon juice.

I made a parsnip and maple syrup cake (is that the one you were talking about HattiFattner?) for Mother's Day last year. It was delicious, but I think I still prefer carrot cake. Good choice Grin
