Coconut flour, anyone familiar with it?

My dad has finally taken control of his diabetes and reduced his blood sugar levels drastically (yay). In line with his new regime, the Christmas present he wants from me is a cake made with coconut flour (his guru has recommended this). He never wants anything for Christmas and I know he genuinely would like this but there seem to be different types. Some appear to be more like desiccated coconut and do you replace all or just some of the wheat flour?

The consistency should be like ordinary flour, not at all like desiccated coconut and I think it can be replaced in same quantities. The cake will definitely NOT have the same texture as a cake made with wheat flour so you have to change your expectations a bit. The Babycakes NYC bakery cookbook has lots of recipes using coconut flour and lots are gluten-free as well as vegan and refined-sugar free. Their website also has lots of tips.

Thank you, that's great. I'd never even heard of it. He's forever getting me to order weird and wonderful ingredients but it's working so I'm happy.
