Making soup. It has another hour to cook. Obv I can't put it in the fridge hot (it's in a v heat conducting Le Creuset). Can I leave it out (covered) overnight then put in fridge in morning?

Does it contain meat ? Dairy ? is there a cold floor you can put it on ?

Jux · 30/11/2011 21:45

I do. I make sure it boils for at least 5 mins the next day, and I do the same with bolognese and all those sort of things. DH has a bit of a delicate tummy but he hasn't had a problem. Nor has dd. I do have a few friends who are shocked by it though, so am prepared to be told off.

I do this all the time and haven't died yet! I would think it'll be fine in November as long as you don't leave it next to the Aga or anything.

VivaLeBeaver · 30/11/2011 21:45

I would if it wasn't meat.

workshy · 30/11/2011 21:48

so long as no meat or dairy it will be fine

and to be honest even if it was meat I think this time of year you could get away with it

This time of year in the uk? Le creuset cast iron with well fitting lid? I'd leave it outside the back door over night. Should keep it cool. Just remember to bring it in tomorrow. I do this with chicken soup.

can you fill sink with cold water?

slartybartfast · 30/11/2011 21:51

why can't you put it in fridge?

CointreauVersial · 30/11/2011 21:54

Slarty - it would heat up the fridge too much if it was a big pot of soup.

Just leave it out overnight, assuming you don't live in the tropics - it will be fine. Presumably you heat it through well before serving?

It's pea and ham soup so has gammon in it, and gammon stock. But you've given me confidence to leave it out. Thank you. Will put in fridge in morning and heat very thoroughly when we eat it.
