Haddock carrots/peas and potato - a simple, cook now, eat twice recipe please?

Hi, I am on a 'what's left in the fridge and store cupboard' week this week. Does anyone have a basic recipe with the above ingredients that I can cook tomorrow and eat leftovers the following day please? (It's just me and DS so there will be leftovers)

I am sure there is something obvious that I am too tired to think of.

I would make a fish pie.
Poach the fish in milk/water mix.
Then use the liquid to make a white sauce from a butter/flour roue base.
Put the fish, peas, leeks, sliced boiled eggs in an oven proof dish and cover with mashed potato.
30mins in the oven and serve with carrots.
Yummy!

Another one for fish pie. I put whatever veg I have. Mushrooms and sweetcorn are nice additions. Sometimes use sweet potato or carrots in the mash too. And whatever fish I have or is on offer, I hate salmon but DS and DH love it. Oh, and smoked fish (haddock, cod) is really wonderful mixed in (used alone can be a bit strong).
