Sponge cake for DD1's birthday: how far in advance can I make it?

Need to avoid last-minute stress .... I'm doing cream filling and mascarpone frosting so will do those on the day (altho maybe I could mix them up the day before, what do you think?), but how far in advance can I do the cake without it being all dried up on the day?

Think some cakes can be frozen well in advance or made a few days ahead and kept in an airtight container. What type of sponge are you doing ? Would elave the decorating to the evening before or morning though, as it needs to be fresh.

You can freeze sponge cake - wrap in tin foil and take out say night before party. If you are cutting it it is much easier to do this semi frozen actually (say 30 mins out of freezer)

i have a fantastic choc cake recipe that I have made 3 days in advance and it stays lovely and moist - not very sweet though but the icing sets that off. Can post it later if you want.

I was just going to make an ever-so-basic Victoria sandwich cake. Could I freeze that? And if I have no room in the freezer (highly likely), how long would it keep in a tin?

DS's birthday tomorrow, I've made a madeira cake this morning and am icing it tonight - Darth bloody Vader!!!

franch - yes you can freeze normal victoria cake. Would prob keep in a tin for 3-5 days, but don;t know for sure - would it all get eaten on the day?

may not all get eaten. will prob make max 2 days ahead but if things are manic i'll do it earlier and freeze. thanks
