Veggie slow cooker recipes (for a fussy eater)

Hello

My teen DD is a quite fussy eater and also a vegetarian, as she doesn't like the texture of meat

Recently got a slow cooker and I'm trying to meal plan and find new things - any ideas?

I made a veggie soup in it but it was rubbish, I didn't follow a recipe though I just threw everything in and hoped. It wasn't good!

She likes most veg, pasta, potatoes and the flavour of meat (eg stock, gravy)

She doesn't like any meat, fish, or spice.

Please help if you can :)

My slowcooker is seriously under-used because I struggle to find veggie reciopes to go in it.

I make a nice veggie sausage casserole but haven't done it in the slowcooker. It might work.

Diced onions and carrots. Passata. Paprika. Grainy mustard. Honey. Green lentils. Cook until tender then add sliced veggie hotdog sausages until warmed through.

The problem with veggie recipes is they don't really need that long to cook.
i make a veg soup using one onion, 2 carrots, 1 potato, 1 red pepper and use veg boullion for the stock and its done in half an hour.
When i'm struggling for ideas I tend to use the good food recipes online or just google for ideas.

Yeah - I don't think anything needs that long to cook really even meat but the slow cooker is just good for prepping stuff while I actually have some energy in the morning and it being ready when needed with zero effort from me. So by the time it's getting eaten it's almost as easy as a takeaway but ten million times cheaper and healthier. I love it :o

Thanks for the soup idea - thats pretty much what I did last time but minus the pepper so will try it with that

Meatball (asda meatfree) and root veg casserole. fried off onions and root veg for a couple mins, chucked in with meatballs, stock made with kallo veg stock few herbs, some red wine, thickened with flour last hour or so. Really delish.

Next day used the other half of the fried onions and root veg, just added stock and made soup.

Can use it to make bolognaise, chilli, curry although not if she doesn't like spice! Cottage pie filling, other pie fillings, ...loads more
