What can I make with left over turkey and the following................????

Got some left over turkey out of the freezer and have no money to buy stuff so need to use what I have at home. Got stuff like onions, peppers, mushrooms, potatoes, brocoli, tinned toms, kidney beans, baked beans, tinned sweetcorn, frozen veg, mixed herbs, garlic salt and chilli powder.

May have odd other bits but what can I make??? A friend mentioned a curry at christmas but I've never made one and don't think I have what I need?

Any suggestions?

do you have curry powder?

name the herbs you have .. you could italian or chilli or curry

Mixed Herbs
Minced Garlic
Garlic Salt

also (prob no good?)...

mint sauce
whole grain mustard
worcester sauce
stock cubes
honey

I must sound really stupid but I just don't know where to start (dh and I are used to naughty ready meals as we're so busy all the time but we need to change this!)

I think I would go for chilli chop onion and fry with garlic for 5 minutes

add in can of baked beans, can of tomatoes, can of kidney beans .. put in a little chilli and about 2 tbsp of cumin .. you may need to add a little water if too dry but should be ok

put in diced turkey (assume already cooked .. do big bits turkey)

stick in oven for 45 minutes (covered)

serve with brocolli

I also have carrots and parsnips aswell as rice and pasta. Just putting down what I have!

woh fantastic

any turkey bones? make stock - cut the meat off, put the bones in a pan, fill up pan with plenty of water, add a carrot top or bit of onion if you have them, bring to boil and simmer for 1 hour

chop onions and garlic, and dice potatoes quite small

then soften plenty of onion in some oil if you have it, some water if not. at least 5 mins on a low heat until they are transparent. add garlic.

then big spoonful of curry powder if you have it - higher heat - fry for a minute. With kids i tend not to use chilli powder but could do the same with a teaspoonful of chilli powder

then add chopped up turkey meat and stir on same heat as curry powder

then do potatoes, same

then do kidney beans, same

then add turkey stock (or stock cube if no bones) bring to boil and turn right down to simmer for 1 hour

wouldn't exactly call it a curry but that's what i'd do

then tomorrow buy some eggs and do a spanish omelette with mushrooms, peppers and rest of potatoes?

.. am making it up btw .. hope it works .. I did something similar with sausages last night and was quite yum .. but we like beans (I put in a can of chickpeas too)

Thanks again. I will be here lots no doubt as we have zero money at the moment so I need to do what I can with what we have in our fridge/cupboards!

ps if doing stock for an hour puts you off just do it for 30 mins or even 5 mins - it all adds more flavour than plain water

carrots would work well in the chilli .. chop them and add them to the onion to fry for a couple of minutes (after onion has softened) then add the beans

not sure without the cumin .. it kind of rounds out the flavour .. but should be ok (have never done without cumin tbh)

stock .. need bouquet garni, salt, about 6 peppercorns .. a whole onion cut in quarters, a carrot, a stick of celery .. put bones (any kind can sometimes get free stock bones from butchers) and stuff in pan, add water bring to boil and skim off fat, then simmer covered for 4 -5 hours

strain, let cool and skim off fat again

can then make soups, stews etc

Great help buys. How many bones (roughly) do you need to make sure. We've only got one big leg bone (i think) so probably no good?
