Anyone know the recipe for the left over coke from Nigella's Ham?

I made it for the first time at Christmas. It was the BEST ham I've ever done, even though it seemed a really strange way to cook it.

I didn't have time to use the leftover liquid, but she says in How To Eat:

'The cooking liquid makes a quick version of South Beach black bean soup. I throw in 500g of beans in the liquid, adding about 250ml water and the juice and zest of a lime. When cooked and pureed as usual, I eat with some more lime squeezed in, or some drops of balsamic vinegar stirred in, a dollop of smetana or somesuch, and a handful of just chopped coriander.'

I haven't tried this and have no idea what 'smetana' is, but if it's anything like that ham, she knows what she's doing!

Lol I know, I know! It sounds so weird doesn't it, but m/netters were saying just before Christmas it was good so I gve it a go. Somehow it's gorgeous!

here it is

South Beach Black Bean Soup

I never soak black beans: just make sure that when you cook them they get their 10 toxin-destroying minutes of vociferous boiling and you're away.

500g black beans
coca-cola ham stock
juice of 1/2 lime
1 tsp ground cumin
1 tsp ground coriander

to serve:
sour cream
fresh coriander, chopped
lime wedges

Cook the black beans in the coca cola ham stock until they're tender. Remove about 3 ladles of soup to a blender, add the lime juice and ground spices, blitz to a muddy puree and stir this back into the pan of soup. And that's it.

Swirl some sour cream, as you please, into the bowls of soup as you ladle them out and sprinkle with some freshly chopped coriander. Plonk the lime wedges onto the table and let people squeeze the sharp juice into this dense, sweet soup as they eat.

Serves 8.

Im in Spain and couldnt get treacle, so I used syrup and I didnt have mustard powder so I used whole grain mustard and it was still yummy.

This is the one I used, but I think she is prone to altering her recipes in some of her books, so others may have done theirs a little differently.

if I can get black beans here, im not sure. I will probably get dh to get them in Gibraltar, I'll let you know how it goes.
