Can anybody give me a really nice Pea and Ham Soup recipe?

I've got two - one made with green garden peas and pancetta, another made with yellow split peas and ham hock. Which kind are you after?

Ooh, the garden peas and pancetta one sounds nice, yes please!

Just a bit undecided as to which peas would give it the sweetest taste. And whether to cook a piece of ham first or just slices of ham. Decisions, decisions.

There are a couple of versions floating around but they all seem to emanate from Heston Blumenthal:
this one, where you make your own stock using a smoked ham hock and then add pancetta
this one, using a gammon joint
this one, using streaky bacon and pulled ham hock meat

When I made it I doubled the first recipe, but instead of making my own stock with the ham hock, I just used normal stock (in fact I think I used veg boullion powder!) and added fried lardons when serving. So the ingredients were:
100g butter
400g shallots, sliced
150g pancetta, chopped
3 garlic clove, crushed
whole bag frozen peas, defrosted (I think the bag was 900g?)
750ml stock (I may have used more, just added to taste for thickness)
Salt and freshly ground black pepper
Handful of fried lardons for garnish

It looks like the other recipes build on this by adding any or all of the following: carrots, onions, leeks, mint, gammon, pulled pork/hock.
