simple easy to freeze loaf cake recipes please bakers

I want to make 3 or 4 loaf cakes for the refreshment stall at the xmas market I've organised as a pre-school fundraiser. I want to make 1 a week and freeze them so that I'm not stressing the day before. So your favourite loaf cake recipes would be much appreciated :)

I've been making Nigel Slater's Double Ginger Cake recently, from his Kitchen Diaries book. It's lovely.

I don't use the stem ginger and it's still very gingery.

I made this with butternut squash, absolutely fantastic! pumpkin & ginger loaf
The dark malt loaf is lovely too.
Good old banana loaf & carrot cake

All freeze & defrost well (I cut mine into slices & wrap in greaseproof)

hwhite6 good links! Although not sure about the dangers of being able to defrost a slice of cake whenever I like... Hmm

Make them dairy free & feed a slice at a time to ds1, maybe having a slice for myself too, for quality control purposes obviously!
The squash & ginger loaf really is divine!

I really like one in the current issue of Good Food.

Soak 250g sultanas, 100g mixed peel & 140g light muscavado sugar in 300ml of strong Earl Grey tea overnight.

Add 1 beaten egg & 300g SR flour, pour into a greased 900g loaf tin & cook at 150/130 fan for 1.5 hours.
