Ratatouille for Saturday lunch - can I make now or am I best to wait?

I can either make it today, which would be preferable, or Friday night.

Making 2 different types as a favour to my parents inlaw, both to feed about 6 and they will be eaten Saturday lunchtime into sat evening.

Whadda ya reckon? Now or wait?

I quite often make meals for about 4 days on Sunday and they keep fine. Am veggie though. DH's household-goddess-but-also-doctor-and-mum-of -three told me she used to do this, and if it works for her, then it is good enough for me.
