food costs storing, need to cut back. so...

currently am budgeting £1 each for evening meal, and am begining to think that this is too much, as in total days cost per person, with breakfast and lunch must be at the most £2.50 ish.

so, is there a way to cut down evening meal costs to 50p per person?
without the use of egg, nuts , beans, etc?

we are a large family and the food bill seems to be huge !

O.K., usually the meals that I make come in at around 50-75p per serving (sometimes a lot less), but a lot of them have beans or lentils in them. It's hard to get prices down as low as this and still avoid things like that. Even a lot of the soups that I make have chick peas/haricots/lentils in them.

You could try:

cheese and tomato rice

2 onions, chopped
2tins chopped toms
2 cups value rice
3 cups water
salt and pepper
some grated cheese

Fry onions until softened. Add rice and stir until shiny and going translucent. Add toms, boiling water and seasoning. Mix well, bring to the boil, cover tightly and redce heat. Cook for about 20 minutes until rice is cooked and liquid absorbed. Serve topped with a bit of grated cheese and some tortillas/bread and butter.Serves 4

Creamy tuna and peas:

Fry an onion in 4 tablespoons of oil. Add 4 tablespoons of flour and cook for a couple of minutes. Gradually blend in a pint of milk. Stir until boiling and then simmer for a few minutes. Add a tin of tuna, drained, and half a bag of frozen peas that you have thawed. SImmer until heated through and season wll. Serve over rice or toast. serves 4 or 5

Other creamy tuna:

Fry an onion until soft with a little bit of garlic. Add a tin of condensed mushroom soup and half a soup tin of milk. Stir until smooth and heat. Stir in a drained tin of tuna and either some peas or corn. Heat through. Serve over pasta/rice/baked potatoes/toast. Serves 4 or 5.

Patatas bravas

3lbs potatoes, cut into cubes, tossed in oil and roasted in the oven.
1 onion, chopped
garlic
1 red pepper, chopped (frozen is cheaper)
1tblspn smoked paprika
1/2tspn cayenne
2tspns sugar
1 carton pasatta
couple of ounces of sliced chorizo, cut into quarters.

Fry the onion until soft. Add chorizo, garlic and pepper and fry until chorizo releases oil. Stir in spices and cook a couple of minutes. Add tomatoes and sugar. Mix well and simmer for about 10 minuts or so. Add roasted potato chunks and leave for a few minutes until the sauce absorbs into them a bit. Serves about 5.

Spinach rice

1kg bag frozen spinach
1 chopped onion
2tblspns lemon juice
1tblspn curry powder
2 cups rice
3 cups water
salt and pepper

Soften the onion in a little oil. Add rice and spices and stir around. add spinach, juice, water and seasoning. Mix well. Bring to the boil, cover and reduce heat. Cook gently until rice is cooed and liquid absorbed. Mix well. Serve with chopped onions and tomatoes . Serves 4 or 5

Pasta with olive oil, garlic and parsley.

Cook pasta. Heat about 150ml of olive oil with a good amount of chopped garlic for a few minutes to infuse flavour. Toss pasta in olive oil, mix through a bunch of chopped parsley. Season well with salt and plenty back pepper.

Pasta with tinned tomatoes, topped with grated cheese

Potato and spinach curry - just cubed potatoes, onions, frozen spinach, curry spices and enough water to stop it burning onto the pan.

Potato and bacon bake -
1 large potato per person, thinly sliced
1/2 an onion per person, thinly sliced
1 rasher of bacon per person, cut into little bits
1 pint of white sauce for every 4 people
salt, pepper and nutmeg

Layer in a baking dish, seasoning between cycles and finishing with potatoes. Pour over sauce and bake at 160 for about 2 hours. Serve with frozen mixed veg to keep cost down or with peas and carrots.
