If you're making chicken soup, what do you vary it with?

I mostly do chicken and leek broth, sometimes with potato, or creamy chicken and tarragon p. I just end up with chicken stock and roast chicken leftovers so often and I fancy something a bt different, would a creamy soup with some Thai spices work do you think?

I don't like Thai but that would work. I throw in noodles & a tin of sweetcorn, maybe a chilli to warm it up a bit. Mmmmmm.

Or a tin of tomatoes and a bit less stock than usual, celery, spring onions, frozen peas, chilli & chrorizo - Spanish Chicken Casserole Wink

That website has loads of ideas, and I've foudn their recipes to be pretty reliable (especially if you take into account any comments at the bottom from people who've made them).

with thai spices you could add a tin of coconut milk and some chili. Bung in some noodles too & it would be lovely.
