I need a good recipe for cheese scones please.

one where the scones will be nice and light rather than the barely risen solid excuses for scones that I seem to make.

I can make nice cakes therefore I'm blaming the recipe rather than me.

50g butter
200g self raising flour
Good dash of cayenne pepper
Pinch of salt
Black pepper (optional)
90 - 120g grated cheese - we use Red Leicester but Cheddar works well.
100- 125ml milk

Preheat the oven to gas mark 7.
Rub butter into the flour until it resembles bread crumbs. Add the cayenne pepper, salt and pepper and about 2/3 of the cheese.
Slowly mix in the milk and stir with a knife until it "comes together". It should not be too wet. Use your hands to form a ball of dough.
Roll out on a floured surface to no less than 2cm thick - I just use my palm to flatten it though.
Cut out using a scone cutter, the dcs like using stars and hearts.
Stick some of the reserved cheese on each scone and place on a greased baking tray.
Place on a high shelf in the oven for 10-15 minutes.
When they're ready, place them on a cooling rack,
