If you had a load of left over veg what would you do with them?

I have cherry tomatoes, mushrooms, broccolli, onions. At the moment i am going to boil them as i dont want to fry them....
Any advice greatly appreciated.

Sort of minestrone type soup with some small pasta shapes?

You could roast them (apart from the broc - steam it) and then make a pasta bake / gratin or somthing with them?

I would make a pie with phyllo pastry and maybe some mozzarella or ricotta or you could make a fritatta and use them all up.

I tend to roast spare veg and add it to all the dull things I have to make for DD2 after I've given her a portion.

Not good boiling veg, apart from the broc. Thats the odd one out - the others could all go on top of a pizza (or bruschetta type thing)

Well, you could bin them. Or if you're like me, just leave them in the fridge for a week then bin them.

Make a curry with them, fry in pan with some onion if you have some, add a can of chopped tomatoes and curry powder and season to taste. Serve with rice. If you have a can of chickpeas in the larder, all the merrier, toss them in!
