Lots of eggs and lots of jam - what can I make?

I have a ridiculous number of eggs - we have our own hens and the new ones have just come into lay - so 5-6 eggs per day - that I need to use. We eat eggs all the time in pretty much every form.

I also have lots of jam, bramble, fig, plum, apple, quince, apricot are the main glut.

So what can I make to put these 2 together, which my fussy brats will eat. Obviously victoria sponge, but that only uses 2 eggs.

What about a Queen of Puddings? Still only 2 eggs, but might be a bit different.

I was going to say queen of puddings too! This recipe uses five eggs.

You can make a version of creme caramel using a teaspoonful of jam in the base of each dish rather than making up caramel - I do it with apricot jam which works well.

pancakes! fill them with the jam.

thin pancakes:
1 cup eggs (about 4)
1 cup milk
1 cup flour
pinch of salt

Or what about a steamed jam sponge pudding with custard? That would definitely use up a fair few eggs.

Thanks ladies - Queen of pudding is a good idea - need to get some bread crumbs though (the bread crock is empty) so not for tonight, but I love the idea of creme caramel with jam. I thnk that is todays pudding sorted out.

DH decided he didn't fancy the creme caramel idea, so I made a microwaved sponge pudding with the bramble jelly, then a proper custard to go with it. Everyone loed the sponge, but the kids don't like custard, never mind all the more for me and DH :)

Used up 5 eggs in total.

I've never tried a sweet omlette so that might be next, or maybe eggy bread with jam?

My favourite cinnamon roll recipe has 2 eggs in it. Can't help so much with the jam, sorry.

Sorry, it uses cups not weights so may be no use to you.
