How do you do your Christmas parnips and carrots?

Just wanted to know how others do their Christmas carrots and parsnips, I'm getting some nice organic ones this year and want them to be a bit special, I usually just parboil then throw in a roasting tin with some salt, pepper and olive oil but they can be a bit dry?

Any good tips?

Roast them from raw with honey, olive oil, salt and pepper - utterly delicious

chop carrots into batons fry in a little butter and then boil in a bit of oj [maybe a cup you dont need loads] add fresh rosemary and boil/simmer down until carrots are glazed and you have a little liquid left.

Parsnips - peel, cut to size, toss in olive oil, sea salt, pepper and honey ! No need to par-boil. Make sure there's a nice layer of oil in the roasting tin. 45 mins is usually fine at 180 degrees.

Carrots - roast babies are nice ! Olive oil, sea salt and pepper as per snips. Honey wouldn't hurt them either. They'll cook a touch faster.

Carrots (alternative) - peel, cut, boil until just tender (but still slightly al dente) then in a pan melt a little butter, a teaspoon of brown sugar and some orange zest. Toss the carrots and serve.

We do carrots like NDP with a touch of butter/sugar and orange - really fab.

Sprouts are almost pallatable (but I love them anyway) with lime butter and black pepper and lardons

Parsnips great roasted and at the end a bit of honey with some sesame seeds. Delish.

We do parsnip puree - dead easy and everyone (particularly my sil!) loves it. Basically just boiled parsnips pureed with ceram. You can put toatsed pine nuts on top if you want - but I never bother.
Carrots I just do plain steamed as that's how I liek them!
