Any MNers Grow up in Kent? Gypsy Tart

My parents both grew up in Kent and have fond memories are obsessed with this pudding, it used to be served with their school dinners.

I have tried to find a recipe over the years but apparently it is for the 'wrong' gypsy tart, this was a regional thing.

I am making them a hamper for Christmas and it would be amazing if if I could include a genuine Kentish Gypsy Tart for them.

Can anyone help?

think this might be it. i remember asking once and being told it was tinned milk of some kind. was one of the few things the dinner lady's in kent schools could cook.

Me me me!!! Use a tin of chilled evaporated milk and 10oz dark brown sugar and whisk for about 10-15 minutes, then bake in a pastry shell you've already baked blind for about 10 mins.

i never realised it was a kentish thing. if it is as easy as the recipe i might give it a go
