can somebody tell me where to find buttermilk (not cultured buttermilk)

Hello I need buttermilk for a danish recipe and I can only find cultured buttermilk in waitrose. Does anyone know if any of the other supermarkets do uncultured buttermilk.

I'm pretty sure buttermilk is cultured buttermilk, IYSWIM. In countries where buttermilk is standard, they just call it buttermilk, but in countries like the UK, where it is unusual, it's called "cultured" buttermilk.

Yeah, I've looked it up in McGee. Buttermilk is fermented for 14-16 hours at 22C. All buttermilk is fermented/cultured. Hope this helps.

Waitrose do it. You can cook chicken in it for an hour and a half, it;r VERY delish, simple and low fat!

Hi - thanks for the responses but what I am looking for isn't the stuff in Waitrose - I'm looking for the old fashioned buttermilk which is a liquid rather than the yougarty stuff available in supermarkets.

Cultured buttermilk," commonly available in supermarkets, is not the same as "old fashioned buttermilk" The latter is the liquid which remains after churned butter is removed. The two buttermilks bear few traits in common.

I nicked that definition from some webiste
Apparantly it is widely available in Denmark and I remember buying it in Canada but it seems difficult to get hold of here.

Traditionally, it is the liquid left over from when butter was made. But the milk was left overnight, so the cream would fully separate. So the milk was fermented, IYSWIM. This is from McGee.

I don't think anyone sells the liquid left over from butter any more. The fermented buttermilk I've bought was a thick liquid, though.

the stuff in waitrose is made by Yoplait (IIRC) and it is quite a bit thicker

asda is your boy - trad Irish (i think) buttermilk

(If stuck,thin down some yoghurt with water.)
