I've got a Tesco recipe for Banoffee pudding that has crushed almond thins on the bottom followed by a layer of bananas, a layer of dulche de leche and then whipped cream. I want to make it tonight as I have people coming for lunch tomorrow (and a I have a sick 15 month old who is going to need lots of tlc in the morning) but I'm worried that the biscuit base may go soft if I make it too early. What do you think?
