Easy Mid-Week Meals

I've just gone back to work full time, both DH and I commute and we're both notoriously dreadful at planning and organising our food due to hectic work and social lives. Plus there's a lot of "what do you want for tea?" "I don't know, what do you want for tea.." ad infinitum.

I've tried in the past to meal plan and budget but life always gets in the way. We also always forget what kind of food we can have, decide we don't know what we want/have nothing in the house and end up with a takeaway. So what I'm trying to do now is have a printed out list as an easy-refer guide. Can you help me?

So far I've got the obvious options chilli/bolognese, pasta dishes, etc but I'd love to hear of any specific easy tasty dishes you guys have on your weekly rota.

this pork chilli recipe is so good i've made it twice in a row this week - once with taco shells and all the trimmings, once with rice. it's well easy, it freezes and you can add stuff to it if you want e.g. tired-looking peppers or a tin of kidney beans.

i've also found that having less in the fridge actually makes me more creative about what i cook. if the fridge is constantly stocked with stuff to make my favourites, then that's all i'll make.

just thought of another: bean and pesto bake. fry chopped onion and garlic, add tin of tomatoes and a couple of tbsp of red pesto. cook for a few minutes, then add a tin of whatever type of beans you like (i usually do a mix of borlotti, black eye and kidney). simmer for ten mins, then pour into casserole dish and top with thin slices of parboiled potato. grate some cheese on top if you like, bake till brown on top and serve.

Quick and easy prawn pasta.

Cook dried pasta, about 7 minutes before ready add florets of broccoli. Drain. Stir in a pack of king prawns, a couple of tablespoons of creme fraiche and a squeeze lemon warm through and serve!

It's delish! I often substitute the broccoli for asparagus and the prawns for poached or smoked salmon.

Some fab ideas here.

I often make nachos for a v quick supper: big plate each, layer of tortilla chips, splodge around some salsa (buy or make), add layer of grated cheese, put under the grill (watch it as it can burn quickly). Have with salad if being healthy or beer if not. Also works with leftover chilli, and is even better with avocado/guacamole & sour cream/natural yoghurt.
