what type of apples? cooking apples or eating ones?
do they keep well over winter?

you can cook one in a pot with a little water. if it dissolves into apple sauce it is a cooking apple.
also, if you bite into it and your gums shrink, it is most probably a cooking apple.

I'm facing an apple glut too! I've made apple sauce, pie and crumble, as well as cobbler. I'm planning to cut some up and freeze it ready for mincemeat this Christmas and to try Potato and Apple cake eventually. I'm getting a bit tired of hauling home buckets of apples, to be honest, but I hate letting food go to waste.
