Home made pizza base

Tomorrow is another cooking lesson with dd and I - we are going to do a pizza, incl base of which I have nooo experience.
Some recipes say mix the yeast, sugar and water and leave it for 10 mins, and then add to the flour, oil and salt mix. Other say make the dough entirely and leave it covered for about an hour to 'prove'.
Is there an MN view on which is best/right?

My gran makes a gorgeous home made pizza base using a scone mix. Sounds weird but is amaaaaaazing. It's good for when you haven't any yeast left Grin

I used to prove my bread or pizza dough in the dishwasher after it had gone through a cycle and been emptied.
It was warm, humid, clean , stopped the airing cupboard smelling 'bready'. And it stopped the blardy cat from getting at it Grin

I find pizza dough very forgiving; once you have a bit of practice you can pretty much estimate the right amount of flour, yeast (I use Dove's fast acting), salt & oil - and then mix to right consistency with luke warm water; I don't even bother kneading it for any lenght of time

sometimes I roll straight away; sometimes I make it in advance and let prove while we go out, so it makes a very quick dinner when we come back

when living in Thailand a friend of mine made fab pizza's by mixing flour with a can of beer - worked a treat too

Pan - heheh made me laugh (sorry!) but full marks for ploughing on by "spreading" the mixture on the plate lol!
