Gimme your fav chinese recipes

Been to the chinese supermarket today and bought yellow bean sauce, oyster sauce, and a load of other goodies to make some chinese recipes from my new cook book but wondered if any of you have any you'd recommoned?

3 recipes that I really like:

Fried rice
*2 or 3 cups of one to two days old cooked rice
*2 cups diced mixed veggies - what ever you have at hand and dice at an angle to get max exposed surface
*1 chili, 3 cloves of garlic and one inch ginger stem diced finely
*half a lemon zest grated and the juice of one lemon
*salt and soya sauce to taste
*scrambled egg optional

Cook the veggies in butter or oil. Once they are crunchy but a bit soft, add the chili etc. and lemon zest and rice. Add salt and soya sauce to taste and the egg. Finally add the lemon juice on top. If you have any herbs like coriander, parsley or mint, you can dice them and sprinkle on top

Soy brussel sprouts
*Cut brussel sprouts in half and place cut side down in a pan with butter. Cook till a bit soft.
*Add diced garlic and chili to taste
Once the brussel sprouts are done, add soya sauce and then turn the gas off. Let sit for a few minutes before serving. You can add chopped chestnuts, if you like

Ma-po tofu
Add black bean paste to a bit of oil, and cook for a minute or so. Add diced chili, garlic and ginger. Add soft tofu and mix. Cook for five minutes or so. You can add any veggies or nuts to this recipe
