Carrot cake is a good option but there's only 2 of us here so I don't want to end up with masses of the stuff. Also trying to shift some pounds so I shouldn't go down that route!

I quite like a carrot salad and I just hand grate it. With sultanas and pine nuts an lemon and oil dressing.

I love roasted carrots. Delish with a little honey or maple syrup in with the oil.

I love carrot mash. You need loads of carrots for that because it all mashes down to very little. You could mix it with taters or swede.

I love carrot sticks with houmus and could make a meal of it. The kids love carrot sticks, we'd all chomp them.

I quite like my carrots simple.

You could probably adapt this depending on what you have in the house. I often make it without the feta as a side and I'm sure just normal chillies / spices would work if you didn't have harissa.

carrot cake of course!
it can be frozen, or given to me.

coleslaw
chopped in stews
grated on salad
mashed with swede

If it was me I'd probably just eat them as they are, love raw carrots. Otherwise yes, carrot salads and carrot roasted with cumin.

add them grated to spag bol or put on the side of a meal grated, my dc seem to love grated carrot on the side with jackets pots or pasta, anything really. carrot sticks as a snack or to go with lunch.

The nicest carrot cake i've ever made was with cooked carrots!! you can make carrot soup without a blender if you chop them quite small.
