Quinoa is lovely. Much quicker than rice, and envelops you in a divine lentil-weaving aura all day. Ds has it for breakfast warmed up with milk, banana and raisins. It's good with stews, kebabs, curry, whatever.

Amaranth, however...[shudder]. Thick, sticky sludge. Ugh. Thanks for the warning on millet, too, Spidey.

O/T some more - DS has a gluten intolerance, so I make him a 'porridge' which is a mixture of rice and millet flakes boiled up with goats milk (so that really does smell goaty ). It's OK, definitely better than the Sainsbury's gluten free porridge. I mix it with frozen blueberries, raspberries and a fresh kiwi to give it some flavour!
