What can i do with sweet potatoes, carrots, leeks, mushrooms for dinner tonight

any ideas, not feeling very inspired tonight

Something with roasted vegetables?

Cook them in olive oil garlic and herbs and then add a couple of tins of tomatoes and a bit of chilli and serve with soured cream and bread
