My kids (and I!) really like this tea loaf so I thought I'd share the simple recipe
1 cup mixed fruit
1 cup hot black tea
half cup demerera sugar
2 cups self raising flour
1 egg
In a large mixing bowl tip:
1 good size cup of mixed sultanas and raisins
I cup of hot, strong (2 tea bags) black tea
generous half cup demerera sugar
Mix, cover and leave overnight for fruit to soak up tea and sugar
Next day grease 2lb loaf tin and preheat oven to 140/150
sift and add 2 cups of self raising flour
and 1 large beaten egg
Mix and place in tin, sprinkle with demerera and cook for 60 to 90 minutes. Remove from tin after a few minutes and leave on cake rack to cool (or alternatively just eat it whilst it's warm )
