Please tell me your fave recipes with whole sea bass

Got a load after BIL went to billingsgate Market :) need some ideas as I only have one recipe I make with sea bass and I'd like to try s

I love it:

• steamed with ginger and soy sauce
• roasted in the oven with mediterranean veggies (courgettes, tomatoes, peppers, thyme, rosemary)
• baked in foil with fennel and garlic and lemon

i like the second one, do you just put all the raw chopped mediterranean veggies in a tin with the fish and bake?

I do a Rick Stein recipe for roast sea bass with veg. You can put some par boiled new potatoes in if you want but the rest go in raw. You can add a tin of anchovies too. I use tomatoes and peppers mainly.

I've always wanted to try salt baked seabass, looks and sounds lovely. The salt is supposed to keep it really moist.

Thanks for the ideas. I've always loved the sound of salt baked fish too, it just seems like such a waste of salt though (im presuming you have to chuck away the salt once baked...) so I've never tried it!
