Want to cook rice for dinner but don't know what to cook ...

Kids have had pasta most nights this week and the only night they did have something with potato (chicken pie), one wouldn't eat a bit and the other only picked so have decided that rice is the way to go tonight. Preferably something with a sauce, healthy and veg that can be hidden or easily picked out (or served on the side). Any ideas wonderful Mumsnetters?

Can you make chilli con carne (but not spicy if that'd be a problem?).

You can put tomatoes, onions, kidney beans and grated carrot into it (and anything else you have handy - chopped fine enough it won't show!).

chicken supreme is lovely with loads of rice and you can smuggle some carrots, beans and peas in it too.

Chicken, onions or leeks, green pesto, peas, green pepper, stock, parmasan and rice

Or chicken, onions, tin tomatoes, red pepper, red pesto, parmasan and rice.

Cook chicken and onions, add rest of ingredients, except cheese, leave to simmer whilst rice cooks and soaks up stock, add some milk to make it creamy and to make it the "wetness" you require, grate parmasan over the top. Yum.

For small people, the chicken can be minced and veggies chopped very small. It's easy to eat and lots of nice things in it.

These are great ideas ...thanks. Change of heart today and have just put some beef in the oven with half a bottle of red wine and will have that with mini yorkshires, mash and veg ... and they'd better eat it. BUT ... I do like the sound of lots of these ideas and shall take note for during the week. Thank you!
