"Healthy" Banana Muffins (great for breakfast)

If your kids are like mine and fussy about cereals I find these are a good alternative (and are almost fat free which is an added bonus).

Ingredients:

2 Beaten Eggs
3 Mashed (ripe) bananas
2 cups (220g) of self raising flour
3/4 cup (85g) of sugar (I used demerera)
1 tsp baking soda
Chopped walnuts (optional)

Method:

Preheat oven to 350 degrees F (175 degrees C).

Combine eggs and bananas.

In a separate bowl, mix together flour, sugar and baking soda.

Fold flour mixture into banana mixture

Fold in chopped walnuts if desired.

Pour batter into prepared muffin cups.

Bake for 20-25 minutes (oven on usual setting, I can't help with this as mine is a psycho and burns everything and so I have to have it on really low).

My son's advice is: add more bananas Grin I think these things are pretty much trial and error though, you eventually find the amounts that work best for you :)

What a great, easy recipe.
I'll be making these for my post baby diet.
Actually I best make a batch this wkend before the baby comes...just to check they taste ok. Research purposes you might say!
