I had a delicious cubed beef chilli in a restaurant a while back and I emailed them for the recipe. So I got that it was Scottish Shoulder of Beef, cooked all day in onions, peppers, kidney beans - and 'secret' blend of spices. grr. I want the 'secret'.

It was soo tasty.

Like it to be fairly spicey. Anyone got a fab recipe?

I would try equal amounts of paprika, cumin, chili powder and a square of plain dark chocolate. If you can get hold of smoked Mexican chipotles you could try adding one of those too.

At a pinch those jars of Discovery Chipotle chili sauce you get in supermarkets work well.

i use a jamie oliver recipe from the tv one day
1 tsp fennel
1 tsp cumin
1 tsp paprika
1 tsp crushed coriander seeds
1 sq dark choc
1 tsp honey
1 tsp coffee granules
2 garlic cloves
2 chopped chillis seeds or not

I make a chilli for friends coming and is similar to above but also use seeds from cardamon pods. I use shin of beef if feeling posh and cut into tiny pieces. It takes ages but worth it if it is for dinner party type thingy. Chillis, dark choc stired in at end. Oh and the best bit chorizo!!! Yum. We serve with tortilo crisps with grated cheese, melted under grill and rice - god I am hungry!
