For the sauce:
50g/2oz butter
110g/4oz golden syrup
110g/4oz soft brown sugar
150ml/5 fl oz double cream
few drops vanilla extract (NOT essence)
- 1 shop bought rectangular ginger cake (McVities is good)
Preheat oven to 190 C/ 325F / Gas mark 5
To make sauce, put everything except vanilla & cream into a small, heavy based saucepan. Leave over a moderate heat until the sugar has disolved then turn up heat slightly & let bubble away quietly for 5 mins - no more! Add vanilla extract. Pour in the cream, it will froth a little. Give a good stir & set aside to cool slightly.
Cut the cake into 8 thick slices. Place into a small deep baking dish & pour the sauce over them. Put in pre-heated oven & leave for 15 mins until sauce bubbling & cake soggy with sauce.
Serve hot with cream./ice cream
