Wagamamas Chicken Katsu curry - I want to make my own!

Anyone get any recipes for this meal?....my absolute favourite from Wagamamas, but I have tried and failed to make my own version of it at home

They sell a katsu curry kit in most supermarkets and I'm sure you can get the sauce ready made too.
It's probably on the wagamama cookbook. You could sneak a peek in a bookshop.

Get some panko breadcrumbs (I get from an asian supermarket, waitrose might do it).

My Japanese colleague gave me a bar (yes really) of curry spice she brought me from Japan because she knows I love chicken katsu curry. It looks like a chocolate bar but you break off squares and it makes the curry sauce. She got me this brand.

I asked her if this was just a ready meal (like our equivalent of getting curry sauce in a jar) and actual cooks in Japan make it properly with spices and she said no, it's not considered authentic unless you make it using the packaged curry block!! (She's a great cook too!)

This is easy to buy here in London but if you're not, and don't live near an Asian food market or want to order online, it seems it's relatively easy to make something from scratch that approximates to what it tastes like using the curry bar:

Yes you need special japanese breadcrumbs, and oriental curry sauce - ours comes in a pot that says Goldfish Brand Chinese Curry Concentrate - it tastes like up-market chip shop curry sauce (which is also what the Wagamamas version tastes like). You add it to water, you can get it from most Chinese/asian food shops.

There is a Japanese fast food chain in the Asia that sells nothing but katsu everything - you choose pork, tofu, chicken, boiled eggs etc... on a plate with curry sauce and rice. yum.

For the curry sauce:
Chop 1 onion, 2 carrots and 4 cloves of garlic and sweat in 1tbsp olive oil for 20 mins until soft and starting to caramelise.

Stir in 2 tbsp plain flour and 1tbsp curry powder (I use medium heat), cook for 1 minute - it will look quite dry by this point. Add 500ml chicken stock, slowly at first although it doesn't matter too much if it's a bit lumpy. Add 1tbsp runny honey, 1tbsp light soy sauce and a bay leaf, cover and simmer for 20 minutes.

Remove bayleaf, add 1/2 tsp garam masala and blend

For the chicken, cut into escalopes and bash with a rolling pin to flatten then dip in flour, egg and breadcrumbs (or crushed cornflakes works well - extra crispy), put on a baking tray and spray with oil and cook for about 20 mins at 180 degrees until golden and cooked through.

(chicken katsu curry is DP's favourite food and we have it at least once a week)

We tend to have rice and sugarsnap peas but in wagamama they serve it with rice and salad.

Remembered this thread sainsbo's earlier and consequently bought a katsu curry kit by Blue Dragon. Hope it's nice!

I used a blue dragon kit and some breaded chicken pieces. I did do the rice in a bowl though and turn it out to make it look the same :o

Twas lovely; katsu curry is my wagamama favourite!
