The recipe called for double cream, I used whipping and the lime juice has curdles it. Why?!

Dessert is ruined. I am a cream fool. What is the difference? I made the same recipe last week with double cream and it was delicious. Today, curdles limey slop. :(

Probably not enough fat in it to emulsify it or something like that.
Someone will give a proper answer in a minute.
