Are there any other low carb/low sugar eating diabetics out there?

Or low carbers in general? I'm looking for more ideas of things to cook as my dinners seem to revolve around meat, cabbage, mushrooms and cheese at the moment!

DH is a pre type 2 diab. he swears by oats and cinnamon for bringing down his chloresterol. Iam low carbs and use fructose,rice syrup and molasses for cooking and sweetening everything.

my ds is lowish carb t1 diabetic. omlettes very popular, bratwurst sausage, if you crave hot choc - he is having unsweetened soya milk, with cocoa powder, and sweetener and a mug is 0.7g carbs!
unsweetened (salt) popcorn,
cant think now, but will add more later!
will be interested too!

Hi Scarlett, I follow a Low GI/Low carb diet. Regular meals I have are:

  • roasted white fish (hake) and ratatouille
  • satay chicken drumsticks with thai carrot salad (recipes on www.bbcgoodfood.com)
  • moussaka
  • courgette carbonara (using ribbons of stir-fried courgette instead of pasta, normal carbonara sauce)
  • tapas style dinners- grilled halloumi, aubergine and pesto roll-ups, chorizo bits etc
  • teriyaki salmon and stir-fry greens
-pad thai -sausage, apple and honey and mustard traybake with veg
  • fishcakes made with blitzed cauliflower to replace potato
