Glut of pork

What do I do with left over pork? Any ideas? I cooked it yesterday evening but have quite a bit left over. I have just tried it and after being in the fridge over night, it feels a bit tough. I have no idea what to do with it and can't bear to throw it out.

Shred it up really finely and toss it with cooked rice noodles, sesame oil, soy sauce, sweet chilli sauce and chopped spring onions - yummy
