I have these things in a pot, ready to go in the oven....how long for an at what temp?

Pork joint cut into quarters, onion, tomato, olive oil, potatoes, 2 cups water, 2 cinnamon sticks.

I haven't cooked this for ages but know it is slow cook - what do you think? 3 hours at 140?

Sounds about right to me, but do the potatoes need to be in for that long?

Thanks 4merly - result was that the time and temp were fine - didn't need the water though, the juice from the tomatos and oil would have been sufficient. Tasted good though and the pork was very tender - should have cut the fat off first too.

TGB, the fat was probably what made it so tender. I would generally never cut the fat off first, but I would scoop some of it off the top part way through cooking, and again at the end.
