Leek and Potato recipe not involving milk or cheese

Does such a thing exist? I want to use the leftovers from todays roast tomorrow but all the leek/potato recipes i can find have cheese or white sauce.

Can anyone suggest a simple tasty recipe maybe using stock as my attempts all end up tasting of not very much.

How about leek and potato soup? For that I just fry onions, carrots, celery in a little olive oil, add the leeks and sweat them, then bung in stock and chopped potatoes and cook, then blitz. Is nice if you put some whole peppercorns in it while it's cooking too.

If it were me, by the way, I'd make the soup with fresh potatoes rather than the roast leftovers, and I'd cut the roasted potatoes up, roast them again to crisp them, and put them on top of the soup. Possibly with some crispy bacon bits.

Whydobirds might try that without turning it into soup. Will see if it stands up to being like a shepherds pie type thingy.

Hmm bubble and squeak? never thought of that, no bacon in though Sad - ooh but there are sossies lurking somewhere in the freezer. Will put that on the list for next time Grin
