I love this one:
www.amazon.co.uk/Bean-Book-Essential-Vegetarian-Collection/dp/0722539479/ref=sr_1_1?s=books&ie=UTF8&qid=1305046877&sr=1-1
and this one:
www.amazon.co.uk/Rose-Elliots-New-Complete-Vegetarian/dp/0007325614/ref=sr_1_1?s=books&ie=UTF8&qid=1305046921&sr=1-1
They are quite simple and old school, nothing fancy, but I just love her recipies.
I have been a veggie my whole life!
Hope this helps!

I like the good housekeeping one for slightly posher stuff, but also Madhur Jaffrey's World Vegetarian. We're all veggie and tbh we mostly dip into books like Nigel Slater and general pasta books rather than specific veggie ones.

Leith's vegetarian bible is very good.

Rose Elliot!

World Vegetarian is excellent.

Lesley Waters (is that her name?) has one called Broader Than Beans which is v good too.

I have a passion for Delia's veggie collection.
