Easy, veggie meal I can make in advance and stick in the oven when guests arrive?

I was thinking of some kind of lasagne but all the recipes I have looked at seem to take ages.

Any ideas? Last couple of times I have cooked for these friends I have done stuffed ramiro peppers (with pesto, tomatos and feta) and a puy lentil moussaka - both went down well.

melanzane (=aubergine) parmigiana? you are prob better off googling a recipe rather though than using my rough version

Burritos. Make a bean chilli (up to a few days before), put them inside a wrap/tortilla with a spoonful of rice and some grated cheese, then fold up into parcels and put in an oven-proof dish. Cover in foil, then put in the oven when they arrive for about 40 mins. Make quick "taco" sauce in advance to reheat (onions, garlic, tin of tomatoes, pinch each of cumin and coriander, then stir some fresh coriander in at the end). Serve with green salad.

Veggie burritos. I make mine with sauted sliced red onions and garlic, then add lots of sliced red peppers and cook for 5 mins, then add tinned kidney beans, and tomato sauce (can be made v deliciously by just cooking cherry tomatoes in some olive oil until completely broken down, then whizzing with a stick blender). Cook all together for another 5 mins. I use cumin and paprika as spices to make it a bit more tasty - stir in to the onions. Put a ladleful of mix inside each tortilla and fold up; put all the parcels in an oven proof dish. Ladle another spoon of tortilla mix over the top, then pour over some sour cream and sprinkle with grated cheddar. Put in the oven for 20 mins until cheese is all bubbly and nice.
