Vegetarian chili recipe needed for DH and DS who think all meals must have meat

i need one that is not at all watery! Sort of tomatoey, saucy texture so they can't make out the individual veggies too easily. Ip

We just do our normal chili with aubergine, extra mushrooms, kidney beans, peppers and onions. The mushrooms and aubergine make it quite substantial.

if you cook your usual chilli recipe, but add minced mushrooms or even quorn, i bet they'll struggle to know the difference Wink

I'm veggie and my dh certainly is not yet he happily eats a veggie chilli made with quorn as says can't tell the difference

I use green lentils instead of mince, so the recipe is something like:

1lb bag of green lentils
2 chopped onions
2 tins chopped toms
garlic
chilli powder
6 oxo cubes, whatever flavour you like
black pepper

Cook the lentils and onions in 8 cups of water for about 1/2 an hour. Keep an eye on them to make sure that they don't boil dry. When the lentils are just about done, chuck in the garlic, chilli powder, chopped toms and stock cubes. Simmer for another 20 minutes or so, checking that it doesn't boil dry again. You can add a splash of olive oil if you like to give it a kind of richness.

When I want to eat this, I use veg oxo cubes but if it is just for the children and DH I usually use beef ones to give it a "meaty" taste. This easily feeds 6 and everyone in here loves it. It's also really cheap.

Thanks! I'm trying to go meat free twice a week which is harder that it sounds as DH is Midwestern American and thinks lamb is vegetarian

DS2 is a real "Where's the meat?" boy and I've got away with Quorn shepherd's pie, chilli and bolognese. The lentil moussaka didn't really cut it.

Don't talk to me about moussaka! Lamb plus aubergine - he thought he deserved medal for eating it.
