Does anyone have an easy/quick veggie burger recipe with no kidney beans in?

That's about it really. I would be really grateful for any recipes. Have googled but not found anything that appeals and a lot of them seem quite fiddly.

We are going camping soon and while we love bbq's, we want to avoid taking along frozen burgers and having to eat them all on the first or second night before they defrost. Vegetarian food is likely to be in short supply where we are going as well, so its unlikely we could buy veggie burgers locally.

The only consideration is that one of my dcs is gluten free - but we can always substitute gluten free flour if flour is required in a recipe.

I don't have a recipe besides bean burgers I'm afraid (though you could substitute cannelini beans maybe if it's just kidney beans you don't like?). Aside from those I tend to buy packet mixes Blush

Falafel instead maybe? They're dead easy, but prob difficult to make on a campsite without a blender!

I use adzuki beans instead of kidney beans (big yuck) when I make chilli. Would this suit?

I made some earlier and i'm also coeliac so they would be suitable.
lightly fry chopped onion add 2 tsp curry powder to taste. add 6oz of red lentils and a pint of chicken stock.
boil for 25 mins add gf bread breadcrumbs to thicken, I use a couple of gf granary ciabata rolls.
place rough rounds on a baking tray brush with oil and bake. You can also fry.

Thank you Cockadoodledoo and Happygomummy. I hadn't thought of substituting either cannelini or aduki beans instead of kidney beans - I might have a play and see whether the dcs will eat them. Ds1 doesn't tend to like beany beans, iykwim, but he does like those Dragonfly beanburgers so you never know.

Its me that can't stand kidney beans. Blush

Petisa, that sounds great yes please. We all eat tofu and chickpeas.

Curiousmama that recipe sounds lovely. Would have to substitute the wholegrain breadcrumbs for some gluten free ones, but that shouldn't matter. The only problem would be blitzing the chickpeas. I wonder if I could do that at home and then store them in tupperware until we get there - they'd still have to be used up within the first couple of days then I suppose.

Danthe4th - that sounds perfect and we are already planning taking some gf ciabatta rolls with us, as they're the only vacuum sealed gf bread that ds likes. Do you think it would work if you finely chopped some red pepper or something and added it to the mixture?

Makes 4 burgers but they are quite small so I would double quantities for a hungry family -

120g tofu
1 1/2 tbsp soy sauce
1 small grated carrot
1 crushed garlic clove
1 slice bread made into breadcrumbs
1 spring onion finely chopped (or a bit of finely chopped sauteed onion if easier)
1 egg, beaten
seasoning to taste

mash tofu, mix in soy sauce and leave for 10 mins to marinate
squeeze out any excess liquid (hard!) and place tofu in a a big bowl and add other ingredients
shape into 4 burgers and place into the fridge to chill for about 20 mins (lor much longer of course)
fry over campfire! or brush with oil first if grilling or bbqing

Chickpea burgers - Fry a chopped onion, a grated courgette and two grated carrots. Add two crushed garlic cloves and some thyme. Drain a tin of chickpeas and roughly mash them with a fork. Add 6tbs of porridge oats and the softened veg. Add a couple of squirts of tom puree, salt and pepper to taste and 2tbs olive oil and mix. Shape the mixture into burgers with your hands, dusted with some wholemeal flour. Dip in flour, then egg, then breadcrumbs and fry until golden.

Also love lentil burgers like Danthe4th's recipe but I also add a bit of mashed butternut squash or pumpkin and cheese into the mash.

I made the tofu ones today and they were yummy but I added more breadcrumbs as they would have been sloppy otherwise. It was more like one and a half slices.
