I found a recipe on Ocado the other day - chicken bread and butter pudding - I know, sounds disgusting but I tried it and it's lovely! Break up some cubes of bread (100g ish) in milk (250ml) and beaten eggs (3) with 40g of grated cheese and salt and pepper. Leave for 10 mins or so. Meanwhile, dice chicken breasts and cook in pan with oil until turning golden. Remove from pan and cook diced mushroom (150g ish) and garlic, if liked, until beginning to soften. Mix everything together, place in dish, sprinkle with more cheese and cook in med oven for 25 mins or so until golden and bubbling. DH and kids all liked it and honestly, it's not as awful as the title makes it sound!

Here's a stir-fry dish that is easy to cook but you do need a bit of time to prepare.

flattten them and let them marinade - shame as you could have done that before you go to work - in lemon juice and olive oil. Then grill for about 10 mins each side. Serve with couscous and greek yogurt mixed with coriander and parsley.

they all sound yummy any more

tin of tomatoes, jerk seasoning (from any supermarket.... Walkerswood is good) - go for mild! One onion chopped. Mix together, pour over chicken (or fish). Pop in oven. Yummy!

Enid - what about your chicken nuggets?

Enid · 04/11/2005 19:08

Homemade Chicken Nuggets

750g minced chicken
175g breadcrumbs
175g grated cheddar
1 tbsp mayo to bind
1 clove garlic
salt and pepper
beaten egg and some fine toast breadcrumbs to coat the nuggets

Preheat oven to 180C. Mix all ingredients up to and including salt and pepper together. Form into walnut sized nuggets and roll them in beaten egg and then in toasted breadcrumbs. You can freeze them now if you want to.

Place on greased baking sheet and cook for about 20 minutes (45 if frozen). Voila!

They don't take long to make and once they are done you can freeze them. They are delicious too!

Slit chicken breast put some squidgy cheese in the slit - like brie, camembert, stilton etc. Wrap up tightly in bacon then bake in oven for 30mins serve with nice veggies.

Foil parcels, put chicken breast in, lots of veg sliced thinly, some herbs (tarragon good) then fold up 3 sides of the parcel, before doing up the 4th side pop in a glass of white wine. Bake in teh oven for 30 mins.

Chicken noodle soup. Cut chicken into strips then poach in some chicken or veg stock for 15 mins. (Marigols stock works well for this). Then stir in some quick cook noodles, fine egg ones work well. Cook until noodles tender. Then pop in a very finely sliced chilli, a few finely sliced muchrooms and a handful of chopped coriander. Serve.

slit chicken breasts and stuff with fresh basil or fresh chillis [optional]
Mix pesto with cream cheese
Smother chicken, top with sliced tom[optional]
I then grate cheddar and parmesan, over the top, if im feeling really cheesy I also add a layer of goats cheese before the cheddar. Bung in the oven for about 25 mins or so.

What about Tandoori chicken - use pataks tandoori paste... put the paste on the breasts and let sit for about 10 minutes - then grill or cook in non stick frypan. WHen cooked - cut into slices and serve with a dob of greek yoghurt and we usually have rice with corn, peas and chopped capsicum.
