how do you cook those big flat mushrooms?

you know, the ones that you can put a topping on, ie cheese or similar, and they are practically a meal in themselves. but what do you do to them? do you cook them first before you put the topping on? or do you just put the topping on and then grill / bake them all together?

hope i am making sense! :o

No need to cook first. Brush lightly with oil then stuff - eg with some breadcrumbs, parmesan, garlic and parsley and then bake.

I chuck my filling in, put them in with a little bit of butter in foil wrapped up and bake in the oven for 20 minutes or so until cooked through!

Heat up the grill, smear pesto onto mushrooms, lay on sliced tomato and goats cheese, drizzle olive oil and good sprinkling of black pepper, grill until gooey. Yum!

If anyone gives you this type of large mushroom, collected from the wild, best to break into small pieces and check for little maggoty things before cooking. Sorry people, shop-bought probably ok but not the others if big ones.

mine are shop bought though :o

i made some last night, spread them with pesto then topped with savoury rice mixed with grated cheese and baked for half hour. mmmmm they were lovely :)

I fill them with a mix of chopped coriander & humous, a twist of black pepper & then top with grated cheese & bake in a hot oven for 15 to 20 minutes - very tasty & clean plates all round - even if I do say so myself :)

Make white sauce, and mushroom broken into pieces and cook until all the juices come out and make the sauce grey.

Serve on hot buttered toast with loads of pepper.

Used to have them all the time when little, then the blasted tasteless paris sort took over and all the field mushrooms disappeared from the face of the earth.
