Its the only one I've made so not sure how quick and easy it is compared to others.

1/4 lb self raising flour
1/2 lb medium/fine oatmeal
2oz butter
1 egg - milk if necessary
1/4lb brown sugar
1/2lb Golden Syrup (warmed)
1tsp ground ginger & mixed spice

Grease tin. Put flour and oatmeal into large bowl, stir in a pinch of salt then rub in butter. Add the sugar, ground ginger and mixed spice and mix thoroughly. Add beaten egg and syrup and mix into soft paste. Put in greased tin and bake for one hour Gas mark 2-3/300-325F or 150-170C

found another recipe for Yorkshire Parkin..think thats the one i need to do. Problem is you bake it then leave it in a tin for a week!! Yer right in my house not a chance!!
