Ideas for using a jar of artichokes please

Found some artichokes in oil at a special offer and bought them (normally too tight to pay the ridiculous price for them). What could I do with them? Maybe pasta? Needs to be veggie and not contain tomatoes please!

We use them to put on HM pizza. Yum. Don't have to use a tomato sauce on a pizza either if you aren't so keen of tomato. You can have it blonde as it were. I think that you just use veggies and cheese or perhaps a wee bit of white sauce before the toppings.

Great idea - I usually use green pesto on my pizza - that would be good with the artichokes I think - and some pinenuts. Yum.

Ah I have a 'recipe' without tomato - heat sliced/diced red onions in olive oil and butter with garlic and halved big black olives for a few minutes. Add dry white wine and let the alcohol evaporate. Sprinkle fresh chopped flat parsley over, stir, season, and then leave while you cook pasta. Once pasta cooked, drain and tip into artichoke mixture and stir so it's all evenly covered.

Is about 6 tbsp olive oil to 100ml wine for four people I think, if you need a guide to amounts.

Best way to revive tired store-bought artichokes in oil:
put artichokes in a plastic freezer bag
press one clove of garlic
add a handful of flat-leaf parsley
add a couple of tablespoons of olive oil
add the juice of one lemon

shake the 'chokes in the bag, keep in the fridge for a couple of hours
serve as an antipasto on their own with good crusty bread or serve on pasta.

Wow - you can get them as far as cooking? I just eat them straight from the jar then have plain pasta as I can't wait.

chop them in a pasta salad with olives,onions pickled hot peppers,green/red peppers and small chunks of mozzarella cheese,use the vinegar from the pickled hot peppers and the oil from the artichokes as a dressing. Its really good
