Meal Plans w/c 18/4

Hi,

So I'll start this one off. Here are my meal plans for the following week, starting Monday -

Monday - Homemade pizzas with leftovers from weekend. Pizza dough recipe I use is really easy and no need to let it rise.

Tuesday - Meatballs and Spaghetti and Garlic Bread

Wednesday - Chicken Casserole Never tried this recipe before but looks simple enough.

Thursday - Sausage Casserole with mash potato

Friday - Curry Takeaway for myself and DH and DC's will prob have pasta dish.

Saturday- BBQ which will probably involve spatchcock chicken, sausages and salads and home baked bread.

Sunday - I thought I would attempt the following - Braised Shoulder of lamb with Stoved potatoes and Chocolate Praline Pancake Cake

Anyone else willing to share?

Monday - I am working late so leftover beef boogey-on from sunday with crusty bread i think

Tuesday - Roast Chicken, roast potatoes, veg, yorkshires and propper gravy

Wednesday - I'm going to make a pasta bake with the leftover chicken, pesto, cherry toms and grated cheese

Thursday - Spag Bol with Garlic Bread

Friday - Good friday so will be having fish as per. So Pea Risotto with Panfried Trout

Saturday - Homemade Chicken Madras and Naans (shop bought) Curry is in the freezer

Sunday Lamb Shoulder but ill probably just cook the meat that way and do it with roasties etc.

Will also be making this at some point this weekend for next week.

Still deciding on a nice easter cake recipe.

May start a thead actually

M - Jambalaya (easy and cheap waitrose recipe with chorizo and chipolatas)
Tu - Bacon and eggs with toast
W - Warm salad with new pots, green beans and hard boiled eggs on a bed of baby spinach with tuna mixed with pesto and baby plum tomatoes over the top.
Th - Chicken and spinach pasta with lemon butter sauce
F - Sausage, leek and apple pie with peas
Sa - Welsh rarebit
Su - Going out I hope!

I double the amount of chipolatas and chorizo when I make it, then it feeds me, DH and 3 DC for two nights!

Just to confuse, my week runs Sat - Sat.

Sat - Butternut squash & quinoa cakes with potato wedges (new recipe)

Sun - Roast lamb leg with roast potatoes

Mon - Lamb again

Tue - Salmon with pesto & pasta

Wed -Karahi chicken with rice (I'm trying it as a one-pot version)

Tue - Chicken leftovers

F - White fish with white sauce for DS and a tomatoey sauce for DH & me.

Now I just need to work out lunches as I struggle when I've not thought a bit beforehand about those.

I might make a fruit cake or scones (depends if we've scoffed this week's baking or not Grin). And I'd like to try my hand at making pitta bread for DS as the shop-bought ones are so full of salt.

Monday - lamb cutlets and new potatoes and veg
Tuesday - pasta with tomato and veg sauce
Wednesday - Teriyaki salmon rice and veg
Thursday - Risotto with asparagus from garden Grin
Friday - working late so DP having Pizza and DD having cauli cheese from freezer
Sat - Sausage beans and mash
Sunday - Roast chicken etc

This is my plan anyway - probably will fall apart by tuesday!!!

My week runs from Friday to Friday sorry:
Friday - couscous and roasted veg with mascarpone
Saturday - spinach and feta filo pastries with salad
Sunday - asparagus and tomato tarts
Monday - mushroom pasta
Tuesday - veg chilli
Wednesday - toad in the hole with peas and mash
Thursday - tomato and mozzarella gnocchi bake (like a pasta bake but with gnocchi instead)

Well that was the plan, but then we didn't have dinner yesterday as we were too full after having lunch at in-laws. MIL served lunch at about 3.30 and there was a lot of it. We had yesterday's dinner for lunch today instead, but now it seems too similar to the tarts I was planning to make for tonight's dinner so may experiment and see what else I can make with the asparagus and other things we have in the fridge/ cupboards.

Today - Spanish omelette; spinach, rocket and watercress salad; mustard and honey dressing; raspberries

Tomorrow - qaesadillas; mango and chilli salsa; soured cream and chive dip (if the chives have grown enough by then!); homemade paprika wedges

Tuesday - in London all day, so probably M&S salad on the train back or Indian takeaway on return

Weds - asparagus risotto; rocket salad

Thurs - Thai tofu and vege curry; rice

Fri - either stuffed peppers; new potatoes and salad or stuffed butternut squash ditto.

Saturday - no idea

Sunday - Quorn roast for those who eat it; stuffed mushroom and all the trimmings for me; some sort of cake depending on what I fancy making

Actually, Saturday will either be pasta with artichokes OR takeaway if we don't have it on Tuesday, I think!

Loving everyone's plans, thanks all for sharing. My plan has been thwarted a bit as we ended up having an impromptu picnic today so we will probably have tomorrow what we were going to have today!

We've had people staying all weekend. I feel like I cooked continuously for 48 hours. Still, lots of leftovers for the week.

Sat - Chicken cous cous and carrot salad (Leon recipes), brownies.

Sun (lunch) - poached salmon for 20 people. the salmon was nearly 3 feet long and had to be cooked in two batches. Onion tart, new potatoes, salad. Rhubarb from the garden, meringues and cream.

Sunday (supper) left overs! Egg and chips (from boiled pots) for kids, onion tart and chicken cous cous for grown ups.

Monday rest of the cous cous and salad for me and DH for lunch. Supper will be cold salmon with asparagus and PSB

Tuesday - fish cakes with left over salmon. There should also be enough (did I mention it was a big fish) for a couple of meals worth in the freezer.

Wednesday -Cheaty Leek and potato bake (boil spuds and leeks, tip over tin of L&P soup, top with bread crumbs and cheese. Super thrifty)

Thurs - Risotto of whatever needs eating up by then.

Fri - away to my parents for the weekend, so meat and 2 veg for every meal.

sunday - mediteranean fish stew, couscous
monday - jacket potatoes, what-ever you like filling
tuesday - tuna pasta bake
wednesday - slow cooked chicken thighs and chorizo casserole
thursday - home made pasties
friday - fajitas
saturday - butternut tagine

Sun- lamb in mint and balsamic vinegar, roast pots, carrots and broccoli
Mon - jacket spud, cheese and beans
Tue - DHs friend coming over and bringing an Indian takeaway
Weds - chicken & mushroom pie and veg
Thurs - pasta with pesto and a garlic ciabatta
Fri - cod on pea puree with pancetta
Sat - something out of the freezer!

Yesterday made rhubarb and brown sugar muffins for snacks and pud with custard. Sunday, we had pork & potato hotpot, and cauliflower with caper & garlic butter. Last night we had tuna burgers, wholemeal rolls, salad and h/m guacamole. Next couple of days:

Tuesday - Chicken pasta with caper & herb sauce
Weds - Lighter lamb burgers with sweet potato chips & salad

The rest of the week will wait until box arrives tonight - a day earlier than usual so I'm all to cock Grin!

Weds - Sausages and jackets
Thurs - Probably candelshoes jambalaya, or similar rice based dish
Fri - ???? Not got that far yet.

Today = round courgettes stuffed with sausage, tomato sauce and green beans
Wednesday = heritage tomatoes (went to posh farm shop yesterday) with parma ham, avocado and buffalo mozzarella.
Thursday = bunless burgers with salad or veg
Friday = sausages with roast squash
Saturday = salad of some kind (salade nicoise?)
Sunday = prob roast lamb of some kind.
