Chicken thighs and amazing leeks, but NOT a pie!

I have supremely incredible leeks (from the garden dontchano) which I want to pair up with some nice chicken thighs (bone in, skin on)... don't want leeks to melt and disappear, want to showcase them.

So, yes, I know all about Jamie's turkey/chicken and leek pie on the other thread, but any suggestions for another chicken thigh and leek supper??????

I have bacon/chorizo/most standard cupboard ingredients.

Roast the thighs and serve with leeks sweated in butter with a splosh of creme fraiche at the end.

My kids favorite is pasta with chicken and leeks . Sweat leeks stir in flour and milk to make a sauce mix in cooked chicken (leftovers in this house) and mix with cooked pasta. Top with cheese and bake or grill untill golden. A bit of bacon goes well in this too.

Casserole them: brown the skin on the thighs then take out of dish. Chop bacon small (or use lardons) and fry them to release the fat, add a clove of garlic and leeks sliced in rounds and maybe a diced carrot plus a sprig of thyme. After about five mins put the chicken back in, add 175 ml White wine (or apple juice) and put in the oven for about one hour. Add salt and pepper to suit you.
